Barbecued Fish Skewers with Couscous Salad – for 2

  • 350 grams firm white fish fillets cut into cubes
  • 2 tablespoons moroccan seasoning
  • 4 wooden skewers soaked in water
  • canola oil spray
  • 1/2 cup couscous uncooked
  • 1/2 cup boiling water
  • 1 orange peeled and segmented
  • 2 tablespoons mint leaves shredded
  • 75 grams baby spinach leaves


  1. Coat fish in seasoning then thread onto skewers
  2. HeatĀ grill or barbecue to medium heat and lightly spray with oil. Cook skewers forĀ 5 minutes (or until cooked through), turning skewers half way
  3. Meanwhile, combine couscous with the boiling water in a heatproof bowl, cover and leave for 5 minutes until liquid is absorbed
  4. Fluff cooked couscous with a fork to separate particles, then stir orange, mint and spinach into the couscous
  5. Divide the couscous between 4 plates and serve with cooked fish skewers
