Beef and Bean Burrito

  • 2 teaspoons olive oil
  • 1 small onion chopped
  • 150 grams lean beef mince
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon ground coriander
  • 100 grams can baked beans
  • 125 grams can red kidney beans drained
  • 1 tablespoon mild taco sauce
  • 2 x large wholemeal or multigrain tortillas
  • 1 large tomato diced
  • 1/4 cucumber diced
  • 1/4 iceberg lettuce sliced finely
  • 1/4 red capsicum finely chopped
  • 40 grams reduced fat grated cheese
  • 50 grams low fat natural yoghurt


  1. Heat oil in a non-stick frying pan and cook onion until golden
  2. Add mince and cook until browned
  3. Add herbs, baked beans, kidney beans and taco sauce and cook until thickened
  4. On each tortilla, spoon a quarter of the beef and bean mixture in a line down the centre, leaving room at one end for folding
  5. Top with tomato, cucumber, lettuce, capsicum, cheese and yoghurt
  6. Fold each tortilla at one end, then roll to enclose filling

For a vegetarian version, omit the mince and add extra beans
