Caesar Salad with Yoghurt & Citrus Dressing

Ingredients

  • 4 slices wholemeal bread
  • 50 grams prosciutto or lean ham
  • 2 eggs hardboiled, shelled and quartered
  • 2 baby cos lettuce washed and torn into pieces
  • 2 tablespoons reduced fat parmesan cheese finely grated

Dressing

  • 250 grams reduced fat natural yoghurt
  • 2 garlic cloves minced
  • 1 tablespoon orange or lemon juice
  • zest of 1 lemon or orange

Directions

  1. Preheat oven to 180°C
  2. Remove crusts from bread. Cut bread into 1cm cubes and place on oven tray. Bake bread in moderate oven for 5 minutes or until croutons are just lightly toasted
  3. Meanwhile, fry prosciutto or ham in an medium-heated dry non-stick frying pan until crisp and brown.  Remove from pan and chop coarsely
  4. To make the dressing, blend or process yoghurt, garlic, juice and rind until almost smooth
  5. Combine croutons, prosciutto/ham, eggs, yoghurt mixture, lettuce leaves and cheese. Toss gently to combine and serve immediately

Regular parmesan cheese was swapped for a reduced fat variety
