Ingredients

  • canola oil spray
  • 1 cup unsweetened apple puree
  • 1/3 cup cocoa powder
  • 3/4 cup self raising flour
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 1/2 cup dark chocolate chips
  • 3/4 cup walnuts chopped

Directions

  1. Preheat oven to 175°C and lightly spray a 20x20cm ovenproof dish lined with baking paper
  2. Place apple puree in a medium sized bowl. Sift in the cocoa, flour and baking soda. Add the sugar and mix until just combined. Do nut over mix as this will toughen the brownies
  3. Gently fold in the chocolate chips and walnuts
  4. Transfer mixture to the overproof dish and bake for 25-30 minutes or until the centre feels set, yet still slightly moist, when a skewer is inserted
  5. Cool in the pan for 5-10 minutes before turning out and slicing into squares

Butter and eggs were swapped for unsweetened apple puree to help bind ingredients

This recipe is lower in sugar than traditional Choc Brownie recipes

Tips

Brownies can be served warm or cool

To make this recipe nut free, omit the walnuts and replace with 3/4 cup of your favourite dried fruit (eg. sultanas, diced apricots)

Refrigerate leftovers in an air tight container
