Cucumber and Yoghurt Raita

Ingredients

  • 1 cup reduced fat natural yoghurt
  • 1 Lebanese cucumber halved lengthwise, seeds removed and finely diced
  • 1 tablespoon lime juice
  • 2 tablespoons shallots finely chopped
  • pepper to taste

Directions

  1. Combine all ingredients in a medium sized bowl
  2. Allow to stand, covered,  in the refrigerator for 10 minutes before serving – this allows the flavours to combine

Serves in 1 portion

Full fat yoghurt was swapped for reduced fat yoghurt

 

Tips

This raita is excellent served with spicy dishes such as Chickpea Curry and Rice

Raitas are a great way to add dairy products to your meal. There are many different types of raitas - you might like to try a banana and yoghurt raita instead!

If you need to follow a lactose-free diet, simply swap to a lactose-free natural yoghurt

If you require a gluten-free diet, check the label to ensure the yoghurt is gluten free
