Cucumber and Yoghurt Raita
- 1 cup reduced fat natural yoghurt
- 1 Lebanese cucumber halved lengthwise, seeds removed and finely diced
- 1 tablespoon lime juice
- 2 tablespoons shallots finely chopped
- pepper to taste
- Combine all ingredients in a medium sized bowl
- Allow to stand, covered, in the refrigerator for 10 minutes before serving – this allows the flavours to combine

This raita is excellent served with spicy dishes such as Chickpea Curry and Rice
