Flaked tuna and chickpea salad

  • 2 x 130 grams can chickpeas rinsed and drained
  • 110 grams cherry tomatoes halved
  • 1/2 red capsicum seeded and diced
  • 1/2 lebanese cucumber diced
  • 60 grams snow peas chopped
  • 100 grams tuna in spring water drained and flaked
  • 55 grams mixed salad leaves
  • fresh herb sprigs to garnish


  • 2 tablespoons tomato juice
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon dried mixed herbs
  • 1/4 teaspoon sugar
  • freshly ground black pepper


  1. In a medium bowl, combine the chickpeas, cherry tomatoes, red capsicum, cucumber and snowpeas
  2. In another small bowl, combine all of the ingredients for the dressing. Whisk until well mixed
  3. Pour the dressing over the vegetables and toss to mix.  Add the flaked tuna and stir gently
  4. Arrange the mixed salad leaves on two serving plates and spoon the tuna mixture on top
  5. Garnish with herb sprigs
  6. Serve with crispbread or wholemeal bread (optional)
