Fragrant Lamb Fillet with Steamed Vegetables – for 2

  • 200 grams lean lamb fillets
  • 4 small chat potatoes washed
  • 1 large carrot peeled and sliced
  • 1 cup broccoli florets or trimmed green beans or snow peas


  • 1/2 tablespoon extra virgin olive oil
  • 1 clove garlic crushed
  • 1/2 tablespoon lemon juice
  • 1 teaspoon rosemary leaves fresh or dried


  1. Combine marinade ingredients in a small bowl
  2. Place the lamb in a shallow dish and pour the marinade over the meat, turning to ensure it is well-coated in the marinade. Set aside for about 20 minutes
  3. While meat is marinating, prepare and steam vegetables (leave adding the green vegetables until the potatoes and carrots are just tender)
  4. Heat a large non-stick frying pan or skillet to a medium-high temperature and add the lamb, cooking for about 3-4 minutes each side – depending on how rare you like it (the lamb is often more tender if left a little pink in the middle)
  5. Transfer lamb to plate and allow to rest before slicing thinly
  6. Arrange vegetables and lamb on two plates. Serve immediately
