Ingredients

  • 125 grams Low fat ricotta cheese
  • 125 grams Low fat cream cheese
  • 1/2 cup fresh or tinned pineapple finely chopped
  • 1/2 cup fresh or tinned mango finely chopped
  • 1 cup sultanas
  • 1 banana chopped
  • 3 tablespoons desiccated coconut plus extra coconut for coating

Directions

  1. Mix the ricotta and cream cheeses until they are well combined
  2. Add the chopped fruits and mix through with a wooden spoon
  3. Add enough coconut to bring the mixture to a firm consistency
  4. Roll mixture into balls – approximately 2 teaspoons per ball
  5. Roll the balls in coconut and chill until firm

Serves in 1 portion
