Ingredients

  • 1 red onion finely sliced
  • 1 lebanese cucumber cut into chunks
  • 2 roma tomatoes cut into chunks
  • 2 garlic clove finely chopped
  • 1 small red capsicum seeded and cut into chunks
  • 1/2 cup flat leafed parsley roughly chopped
  • 12 pitted kalamata olives
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar / balsamic vinegar
  • 1 cup reduced fat feta cheese diced

Directions

  1. Combine onion, cucumber, tomatoes, garlic, and capsicum in a bowl
  2. Add olive oil, parsley, olives, vinegar and feta, and mix well. Serve immediately
