Grilled fish served with oven baked vegetables – for 2

  • 1 cup zucchinis cut into wedges
  • 1 cup red onion cut into wedges
  • 2 small tomatoes cut into wedges
  • 2 tablespoons black pitted olives
  • 3 teaspoons olive oil
  • 250 grams white fish fillets
  • 1 small garlic clove crushed
  • 1 tablespoon lemon juice
  • 2 teaspoons dijon mustard
  • 1/4 cup flat leaf parsley chopped coarsely


  1. Preheat the oven to 200°C
  2. Toss the zucchini, onion, tomato and olives with 1 teaspoon of the oil in a baking dish. Place in the oven and bake for 15 minutes
  3. Drizzle 1 teaspoon oil over the fish and place in the baking dish, on top of the vegetables. Cook in the oven for 15 minutes or until fish is cooked through
  4. Whisk together the garlic, lemon juice, mustard and remaining oil to make a dressing
  5. Divide the cooked vegetables among plates and top each with a piece of fish
  6. Drizzle the fish with the dressing and scatter with chopped parsley

If the fish fillets you are using are quite thick, you can place the fish on top of the vegetables when you first put the vegetables in the oven and cook for 25-30 minutes

Serve with a serve of steamed rice or a serve starchy vegetables like sweet potato or potato - why not try our Herb Roasted Vegetables? (you might want to roast this in the oven at the same time)
