Ingredients

  • 2 cups zucchinis cut into wedges
  • 2 cups red onions cut into wedges
  • 3 tomatoes cut into wedges
  • 1/4 cup pitted black olives
  • 1 1/2 tablespoons olive oil
  • 500 grams white fish fillets
  • 1 small garlic clove crushed
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup flat leaf parsley roughly chopped

Directions

  1. Preheat the oven to 200°C
  2. Toss the zucchini, onion, tomato and olives with 1/2 tablespoon of the oil in a baking dish. Place in the oven and bake for 15 minutes
  3.  Drizzle 1/2 tablespoon oil over the fish and place in the baking dish, on top of the vegetables. Cook in the oven for 15 minutes or until fish is cooked through
  4. Whisk together the garlic, lemon juice, mustard and remaining oil to make a dressing
  5. Divide the cooked vegetables among plates and top each with a piece of fish
  6. Drizzle the fish with the dressing and scatter with chopped parsley

Tips

If the fish fillets you are using are quite thick, you can place the fish on top of the vegetables when you first put the vegetables in the oven and cook for 25-30 minutes

Serve with a serve of steamed rice or a serve starchy vegetables like sweet potato or potato - why not try our Herb Roasted Vegetables? (you might want to roast this in the oven at the same time)

    Very tasty! I definitely needed a decent sized piece of fish though. I liked that it didn’t take long to make either.
