Ingredients

  • 1 ripe avocado halved, stoned
  • 1 small or half large ripe tomato finely chopped
  • 2 shallots trimmed and finely chopped
  • 1 garlic clove crushed
  • cracked black pepper to taste
  • 2 teaspoons lime juice
  • 2 tablespoons fresh coriander finely chopped (optional)
  • 1 tablespoon reduced fat natural yoghurt

Directions

  1. Scoop avocado flesh from skin with a spoon and place into small mixing bowl
  2. Add all other ingredients except for yoghurt
  3. Mix well with a fork until well combined and mixture is an ‘easy to spread’ consistency
  4. Add yoghurt and mix through gently
  5. Serve with vegetable sticks for dipping

Full fat yoghurt / sour cream was swapped for reduced fat yoghurt

 

Tips

Guacamole is great as a sandwich filling too!

If you require a gluten free diet, choose gluten free yoghurt
