Ingredients

  • 500 grams chicken breast fillets trimmed
  • canola oil spray

Marinade

  • 1 teaspoon chilli paste
  • 2 garlic cloves finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika

Directions

  1. Combine ingredients for marinade in small bowl
  2. Place chicken in shallow dish.  Pour marinade over chicken
  3. Allow to stand and marinate for about 30 minutes, then drain off excess marinade
  4. Heat non stick frying pan to medium high, then spray with oil
  5. Add marinated chicken and cook for 5-10 minutes each side or until golden brown and cooked through
  6. Remove from heat. Serve immediately with a side of vegetables
