Ingredients

  • 1 sachet low calorie raspberry jelly crystals
  • canola oil spray
  • 2 eggs
  • 1/3 cup castor sugar
  • 2 tablespoons wholemeal self-raising flour
  • 2 tablespoons plain flour
  • 2 tablespoons cornflour
  • 1 x 800g can of apricot halves in natural juice Retain fruit juice
  • 500 millilitre reduced fat custard
  • 2 cups fresh strawberries washed and cut into quarters
  • 500 millilitre natural low fat yoghurt
  • 1/2 cup crushed nuts

Directions

  1. Place jelly crystals in a jug. Add correct amount of boiling water according to packet instructions, and mix well until crystals have completely dissolved. Pour into a loaf pan and allow to cool in the fridge for up to 4 hours, or until set. Once cooled, cut jelly into cubes
  2. While the jelly is setting in the fridge, use the following steps to make the sponge: Preheat oven to 180°C. Grease and line a round cake pan with canola oil spray and baking paper. Beat the eggs and castor sugar together with an electric mixer until thick and creamy.  Sift the flours together over the egg mixture and gently fold together until combined. Spoon mixture into the pan and bake for 20 minutes or until the sponge springs back when touched. Turn onto wire rack for cooling
  3. To assemble the trifle, cut the sponge into 3cm pieces. Arrange half over a large serving bowl. Drizzle with half of the fruit juice from the canned apricots, cover with half of the jelly pieces, then half of the custard. Scatter with half of the fruits. Top with half of the natural yoghurt. Sprinkle half of the crushed nuts. Repeat the layers and cover to refrigerate until time to serve

Tips

To save time, make the jelly and the sponge the night before for quick and easy trifle assembly the next day
