  • 500 grams lean beef mince
  • 1 brown onion diced
  • 2 cloves garlic finely chopped
  • 2 teaspoons cumin powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 red chilli deseeded, finely chopped
  • 1 carrot grated
  • 1 green capsicum chopped
  • 400g tinned crushed tomatoes
  • 2 tablespoons tomato paste salt reduced
  • 125 millilitre salt reduced beef stock


  1. Spray a large saucepan with spray oil
  2. Fry the onion and garlic over a high heat for 5 minutes until cooked
  3. Add mince and stir until meat begins to brown
  4. Add cumin, smoked paprika, dried oregano, chilli, carrot, and capsicum
  5. Add the crushed tomatoes, tomato purée and stock. Stir well and bring to the boil
  6.  Reduce to medium heat and simmer gently for 20 minutes, until the liquid is reduced
  7. Add drained kidney beans and cook for 1 minute, then remove pan from heat
  8. Serve with brown rice, mashed avocado or reduced fat yoghurt

What was swapped?

Lean mince was used instead of regular mince

Extra vegetables were added to increase the fibre content - kidney beans, carrot, capsicum


Make tortilla chips by cutting wholemeal tortilla rounds into wedges and baking in a moderate oven until crunchy.

Leftover mince can be made into a healthy pizza by toasting a wholemeal tortilla, adding the mince and some low fat grated cheese and grilling until the cheese is melted.
