Minestrone Soup

  • 1/2 cup uncooked wholemeal macaroni
  • 1 tablespoon olive oil
  • 1 brown onion peeled and finely chopped
  • 1 medium (150g) carrot peeled and finely chopped
  • 425 grams can reduced-salt crushed tomatoes
  • 1 teaspoon dried mixed herbs
  • 1 cup (250ml) no added salt vegetable stock
  • 400 grams can cannellini beans rinsed and drained
  • 1 cup green beans topped, diagonally cut into 3cm lengths
  • ground black pepper to taste


  1. Cook macaroni  in a large saucepan of boiling water (following packet directions) until al dente, then drain and set aside
  2. While pasta is cooking, heat oil in a saucepan over medium heat
  3. Add onion and carrot and cook, stirring, for 3 minutes or until onion softens
  4. Add tomatoes, dried herbs and stock. Bring to the boil then reduce heat and simmer, stirring occasionally for 6-7 minutes or until carrot is tender
  5. Add cooked pasta, cannellini beans and green beans. Cook for 3 minutes or until green beans are bright green and still slightly crisp
  6. Taste and season with pepper
  7. Ladle soup into 4 bowls and sprinkle with fresh chopped basil leaves
