Muesli Fruit Balls

Ingredients

  • 2.5 cups nut free toasted muesli
  • 1 cup pitted prunes or dates
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon or mixed spice
  • 1/4 cup rice bran oil (or 50g melted butter)

Directions

  1. In a food processer, process 2 cups of muesli, prunes, honey spice and oil/butter until well combined.
  2. Place remaining muesli on a plate.
  3. Roll level tablespoons of mixture into balls, then roll in remaining muesli.
  4. Refrigerate until firm (about 1 hour) and store in the fridge until ready to serve.

Tips

For a flavour variation, roll balls in shredded coconut or crushed peanuts.
