  • olive oil spray
  • 500 grams lean beef mince
  • 1 can refried beans
  • 1 teaspoon ground cumin
  • 1 teaspoon mixed dried herbs
  • 2 ripe tomatoes diced
  • 1 firm-ripe avocado peeled and mashed
  • 2 spring onions thinly sliced
  • 2 teaspoons lemon juice
  • 8 small wholemeal flour tortillas
  • 1 cup grated reduced fat cheddar


  1. Heat a medium frying pan and spray with oil
  2. Add mince and cook until browned. Stir in re-fried beans, cumin and mixed dried herbs, and warm through for a minute. Remove from heat and set aside
  3. Meanwhile, to a small bowl, add the tomatoes, avocado, spring onions and lemon juice. Mix until well combined
  4. Preheat flat sandwich press
  5. Spread avocado mixture evenly over 4 tortillas
  6. Spread mince and bean mixture over the top
  7. Sprinkle evenly with cheese
  8. Place a fresh tortilla over the top of each, taking care to cover them evenly
  9. Place the quesadilla onto the flat sandwich press. Close lid to melt the cheese and warm the quesadilla through. Keep an eye on your quesadilla as this step will not take very long (about 2 minutes)
  10. Transfer quesadilla to a cutting board and cut each into 4 wedges. Serve immediately

Regular mince was swapped for lean beef mince

To make this recipe suitable for vegetarians, simply replace lean mince with additional re-fried beans, kidney beans or lentils
