Quinoa and brocollini salad with pistachio dressing

Ingredients

  • 1 cup dried quinoa rinsed
  • 400 millitres salt reduced vegetable stock
  • 2 bunches broccolini ends trimmed
  • 1 cup frozen peas
  • 150 grams baby spinach leaves
  • 100 grams reduced fat feta cheese crumbled
  • 100 grams pumpkin seeds toasted

Pistachio Pesto Dressing

  • 100 grams pistachios
  • 1 cup basil leaves washed with stems removed
  • 1 lemon juiced and zested
  • 1/3 cup extra virgin olive oil

Directions

  1. Rinse uncooked quinoa well. Place the quinoa and vegetable stock in a saucepan. Bring to the boil, then reduce heat to medium-low and cook for 15–20 minutes until all the water has been absorbed and the quinoa has softened. If the quinoa isn’t cooked, keep adding splashes of water until it’s done
  2. Meanwhile, bring another small pot of water to the boil. Add broccolini and cook for 2–3 minutes, then add the peas and cook for a further 1-2 minutes until tender. Drain and set aside the vegetables aside
  3. Make the pistachio pesto dressing - blend all the ingredients in a food processor until a smooth paste forms. Loosen with a little water if the pesto is too thick
  4. Assemble the salad – add quinoa, spinach, broccolini and peas to a large mixing bowl and toss through as much pesto as desired. Add feta and pumpkin seeds. Transfer to a large platter to serve the salad. (You may like to reserve some pumpkin seeds and feta to sprinkle on top as a final decoration)

Tips

Quinoa contains a bitter outer coating that needs to be washed away before cooking.

Use a fine mesh strainer when washing and draining quinoa to prevent it from being washed away

Broccolini and peas can be steamed in the microwave if desired

Quinoa can be substituted for brown rice, pearl barely or couscous
