Quinoa Porridge with Honey, Sunflower Seeds and Kiwi Fruit

Ingredients

  • 1/3 cup quinoa dry
  • 1/3 cup reduced-fat milk
  • 1/3 cup water
  • 1/4 teaspoon cinnamon
  • 1 pinch ginger powder
  • 1 teaspoon honey
  • 1 tablespoon desiccated coconut
  • 1 teaspoon sunflower seeds
  • 1 kiwifruit peeled and chopped coarsley
  • 1 tablespoon toasted almond flakes

Directions

  1. Rinse the quinoa in a fine mesh sieve
  2. Place in a medium saucepan with milk, water, cinnamon and pinch of ginger powder
  3. Bring to the boil, then reduce heat and simmer for 15 minutes (At this point the quinoa should have a slight crunch when you bite it) Remove from heat and drain any remaining liquid, if any
  4. Stir in the honey, desiccated coconut and sunflower seeds. Mix well
  5. Top with  kiwi fruit and toasted almonds
