Ingredients

  • canola oil spray
  • 1 small red onion (100g) finely chopped
  • 4 medium tomatoes (600g) chopped coarsely
  • 2 tablespoons water
  • 1 tablespoon balsamic vinegar
  • 1 medium red capsicum (200g) chopped finely
  • 1 x 400g can red kidney beans rinsed and drained
  • 4 eggs

Directions

  1. Heat a non-stick frying pan and lightly spray with oil
  2. Add onion and stir until softened
  3. Add tomatoes, water and vinegar. Bring to the boil then reduce heat and simmer uncovered for 15 minutes, stirring occasionally
  4. Add capsicum and kidney beans, and cook uncovered for five minutes
  5. Using large shallow mixing spoon, press four shallow depressions into tomato mixture
  6. Working quickly, break eggs one at a time into a cup, sliding each egg into one of the hollows in the tomato mixture
  7. Cover pan and cook over low heat for about five minutes or until eggs are just set
    Use egg slide to carefully lift egg and tomato mixture onto a plate. Serve immediately
