Red Cabbage and Walnut Couscous Salad

Ingredients

  • 1 cup wholemeal couscous uncooked
  • 1 salt reduced vegetable stock cube
  • 1 cup boiling water
  • 1/2 cup walnuts optional roasted
  • 1 tablespoon olive oil
  • 200 grams red cabbage thinly sliced
  • 1/3 cup sultanas
  • 100g grams reduced fat feta cheese
  • 100 grams rocket leaves

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1.5 tablespoons dijon mustard

Directions

  1. Place couscous in a large heat proof bowl or saucepan
  2. Dissolve stock cube in one cup of boiling water then add this to the couscous. Cover the bowl with cling wrap or saucepan with a lid
  3. After five minutes, remove cover and break grains up with a fork
  4. Heat oil in a large frypan and cook cabbage until slightly wilted
  5. Add cabbage, walnuts,sultanas, feta and rocket leaves to the couscous
  6. Make dressing by placing all ingredients in a small jar and shaking until well combined
  7. Toss dressing over salad and serve

Serves in 1 portion

What was swapped?

Wholemeal couscous was swapped for regular white couscous. This swap means that the salad is very high in fibre

Tips

This salad can be madeĀ a few hours before serving and stored in the refridgerator until needed
