Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 garlic cloves finely chopped
  • 2 teaspoons madras curry powder
  • 2 large sweet potatoes peeled and chopped in small cubes
  • 5 cups salt reduced vegetable stock
  • 1.5 cups dried red lentils

Directions

  • Heat oil in a large heavy-based saucepan over medium heat
  • Add onion and garlic, cooking for 2 to 3 minutes until soft
  • Stir in curry powder and cook, stirring, for 30 seconds or until fragrant
  • Add lentils, sweet potato and stock. Stir until well combined
  • Bring to the boil. Reduce heat to medium low and cook partially covered for 20 minutes or until lentils and potatoes are tender

Serves in 1 portion
