Salmon/Tuna Waldorf Salad

Ingredients

  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 200 grams low fat natural yoghurt
  • 2 tablespoons water
  • 2 medium red apples cored and thinly sliced
  • 4 celery stalks trimmed and sliced thinly
  • 4 green onions thinly sliced
  • 4 baby or 1 large cos lettuce leaves separated and torn
  • 4 tablespoons flat-leaf parsley finely chopped
  • 425 grams can salmon/tuna
  • 2 tablespoons walnuts chopped coarsley

Directions

  1. In a medium sized bowl, combine juice, mustard, yoghurt and water. Mix well
  2. Add apple, celery, green onions, lettuce, parsley and tuna. Mix gently to combine
  3. Serve onto plates and top with walnuts
