Soft Fish Tacos – for 2

  • 1 small mango diced
  • 1/2 small red onion (100g) finely diced
  • 1 small chilli optional
  • 1 lime juiced
  • 1/2 bunch coriander chopped
  • 350 grams firm white fish fillets
  • 1/2 cup plain flour (or enough to coat fish in)
  • canola oil spray
  • 6 small corn or flour tortillas
  • 2 cups iceberg lettuce leaves finely chopped
  • 1/2 punnet cherry tomatoes halved
  • 1/2 avocado sliced


  1. To make mango salsa Рcombine mango, onion, chilli (optional), half the lime juice and half the coriander  in a small bowl. Set aside
  2. Cut fish into 1 cm thick slices and coat in plain flour
  3. Heat a non-stick frypan to medium heat and lightly spray with oil. Cook fish for three minutes on each side, or until cooked through
  4. Squeeze a little lime juice over the fish, sprinkle with a little coriander and remove from the heat
  5. Warm tortillas in the microwave for 20 seconds – then fill with fish, lettuce, tomato, avocado, mango salsa and the remaining coriander
  6. Fold tortillas in half and serve
