  • 1 onion finely chopped
  • 1/2 red capsicum diced
  • 2 cloves garlic finely chopped
  • 1 small chilli finely chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika or smoked paprika
  • 1/4 teaspoon black pepper
  • 1 tomato or 6 cherry tomatoes chopped
  • 1 x 220g can salt reduced baked beans
  • fresh oregano or parsley, to taste chopped
  • 2 small wholegrain breadrolls


  1. Caramelise onion and capsicum in a non-stick pan
  2. Add garlic and chilli and cook, stirring until softened
  3. Add cumin, paprika and pepper and stir for about one minute or until fragrant
  4. Add tomato and beans and cook over low heat for a few minutes until sauce has reduced and thickened slightly
  5. Garnish with herbs
  6. Serve on crusty wholegrain rolls. May be served with a pinch of grated reduced fat cheese (optional, and not to be included for DF, LF or VE)
