Ingredients

  • 2 corn cobs or 1 x 400g can corn kernels
  • 4 large ripe tomatoes finely chopped
  • 1 small green capsicum finely chopped
  • 1 medium red onion finely chopped
  • 2 cloves garlic finely chopped
  • 1 small chilli finely chopped, seeds removed
  • 2/3 cup coriander chopped coarsely
  • ground black pepper to taste

Directions

  1. Cut kernels from corn cobs.  Roast corn in a non-stick fry pan at medium heat, stirring constantly for five minutes or until lightly browned
  2. Transfer to a medium sized bowl, add all other ingredients and mix well
  3. Add ground black pepper to taste (optional)
  4. Transfer salsa to a serving bowl and serve with oven baked pieces of pita bread
