Sweet Potato and Sesame Salad

Ingredients

  • 1 large sweet potato chopped into cubes
  • 1 red capsicum sliced
  • 1 spring onion sliced finely
  • 1 cup green beans halved on the diagonal
  • 1 cup baby spinach leaves

Dressing

  • 1 teaspoon peeled ginger minced
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 tablespoons salt reduced soy sauce
  • 3.5 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 1 tablespoon fresh coriander chopped
  • 1 tablespoon sesame seeds

Directions

  1. Steam sweet potato in a large saucepan steamer (or in the microwave) until just tender. Drain and set aside in a large bowl
  2. Meanwhile, combine all of the ingredients for the dressing in a small bowl, and whisk well
  3. To the drained sweet potatoes, add the capsicum, spring onion green beans and baby spinach. Toss with the dressing
  4. Serve immediately
