Tacos with Beef & Beans – for 4

Ingredients

  • 500 grams extra lean beef mince
  • 1/2 gram 420g can kidney beans rinsed and drained
  • 270 grams canned corn kernels drained
  • 300 grams jar tomato salsa salt reduced if possible
  • 1 medium tomato finely diced
  • 1 red onion finely diced
  • 1 avocado halved, stone removed, diced
  • 12 taco shells
  • 200 grams tub of light sour cream
  • 1/2 cup grated reduced fat cheese to serve

Directions

  1. Heat a non-stick frying pan over a medium heat. Add beef mince and cook for 4-5 minutes or until cooked through and browned
  2. Add the beans, corn and salsa, and simmer for 5 minutes
  3. Meanwhile, combine the tomato, onion and avocado in a bowl and set aside
  4. Heat the taco shells according to the packet instructions
  5. Spoon mince mixture into the taco shells. Top with tomato mixture, sour cream and grated cheese

What was swapped?

Regular beef mince was swapped for extra lean mince

Regular sour cream and regular cheese was swapped for extra light sour cream and reduced fat cheese

Tips

  • Low fat natural yoghurt can be used instead of sour cream
  • For variety, used diced chicken fillets instead of mince. To save time on cooking, you may like to buy a cooked chicken - simply discard the skin, shred the meat and heat this cooked chicken with the beans, corn and salsa to make the meat mixture
