  • 1 cup wholemeal couscous
  • 1 salt reduced vegetable stock cube
  • 1 cup boiling water
  • 2 bunches broccolini trimmed
  • 100 grams green beans ends trimmed, halved
  • 1 red capsicum cut in cubes
  • 1/2 cup pitted olives sliced
  • 2 tablespoons parsely sliced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • chilli sliced, optional
  • 1/3 cup toasted pumpkin seeds


  1. Place couscous in a heat proof bowl. Dissolve stock cube in 1 cup of boiling water
  2. Add stock to the couscous and cover with cling wrap for 5 minutes. After this, use a fork to break up the grains
  3. Cut broccolini into smaller florets and beans in half
  4. Steam in a microwave safe dish for 3 minutes until just cooked
  5. Add broccolini, beans, capsicum, olives and parsley to the couscous and stir through
  6. Dress with lemon zest, lemon juice, olive oil and chilli
  7. Sprinkle with pumpkin seeds for extra crunch

Wholemeal couscous was used for more fibre, nutrients and flavour

Salt reduced stock cube was used for a flavour kick with less salt


Couscous can be flavoured with herbs, spices, chilli, ginger. The opportunities are endless

Use any vegetables you have available. Leftover roasted vegetables will work well
