Thai Chicken Pizza – for 4

Ingredients

  • 3 tablespoons water
  • 2 tablespoons reduced-salt soy sauce
  • 2 teaspoons rice vinegar
  • 2 teaspoons minced fresh ginger
  • 2 clove garlic minced
  • 4 tablespoons smooth natural peanut butter
  • canola oil spray
  • 250g chicken breast fillet trimmed and diced
  • 2 cups baby spinach leaves
  • 4 spring onions
  • 1 large red capsisum thinly sliced
  • 4 medium wholemeal pita breads
  • 1.5 cups grated low fat mozarella cheese

Directions

  1. Preheat oven to 180°C and line two oven trays with baking paper
  2. In a small bowl, whisk the water, soy sauce, vinegar, ginger, garlic and peanut butter until well combined. Set this peanut sauce aside
  3. Heat nonstick frying pan and spray with oil
  4. Add chicken to frying pan and cook, stirring, for two to four minutes or until chicken is thoroughly cooked
  5. Transfer chicken to a medium bowl. Add baby spinach leaves, spring onions, capsicum and 1 tablespoon of the peanut sauce. Toss to combine
  6. Spread the 4 pita breads evenly with the remaining peanut sauce
  7.  Top each pita with the chicken mixture, then sprinkle with cheese
  8. Place pizzas onto oven trays, put in the oven and bake until the crust is crispy and golden and the cheese is melted (approximately 10 minutes)
