  • 5 Roma tomatoes finely chopped
  • 1 small red onion finely chopped
  • 3 tablespoons chopped fresh basil
  • 1 clove garlic finely chopped
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar / balsamic vinegar
  • 8 slices crusty Italian style bread (e.g. ciabatta)


  1. In a bowl, combine all ingredients except for bread, and mix well
  2. Add salt and pepper to taste (optional)
  3. Toast the bread on one side using the oven grill
  4. Top each piece of toast with the tomato mixture. Serve immediately
