Vegie packed Spaghetti Bolognaise – for 2

  • olive oil spray
  • 200g lean beef mince
  • 1 cup onion finely chopped
  • 1 garlic clove crushed
  • 1 large carrot peeled and grated
  • 1/2 teaspoon dried oregano
  • 400 grams can reduced salt chopped tomatoes
  • 1 tablespoon reduced salt tomato paste
  • pepper to taste
  • 2 cups cooked spaghetti or fettuccine
  • 2 tablespoons grated parmesan cheese optional


  1. Heat a non-stick pan to medium heat lightly spray with oil
  2. Add minced beef and cook until browned, stirring regularly to break up any lumps. Remove beef from pan and set aside
  3. Reheat the pan and lightly spray with oil. Add onions and garlic and gently cook until softened and golden
  4. Add grated carrot and oregano. Reduce heat to low, and cover to allow vegetables to ‘sweat’ for a few minutes
  5. Return the beef to the pan together with the tomatoes, tomato paste and pepper and stir well. Cover and simmer for 25 -35 minutes
  6. Serve on top of cooked pasta and sprinkle with parmesan

What was swapped?

Regular canned tomatoes were swapped for salt reduced canned tomatoes

Regular mince was swapped for lean mince

This recipe has less meat and more vegetables than traditional bolognaise recipes


This is a favourite meal for many families and the sauce is versatile. If you have leftover bolognaise sauce you can portion and freeze for use later in other dishes e.g. homemade tacos or burritos

If you require  a gluten free diet, use gluten-free pasta
