  • 4 medium zucchinis
  • canola oil spray
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 spring onions finely chopped
  • 2 cloves garlic finely chopped
  • 1/2 a 400g can of lentils drained and rinsed
  • 1 teaspoon dried mixed herbs
  • 2 tablespoons salt reduced soy sauce
  • 1 tablespoon salt reduced tomato paste
  • 1/4 teaspoon paprika
  • 2 medium carrots peeled and cut into 5cm strips
  • toothpicks


  1. Preheat oven to 180°C
  2. Cut each zucchini lengthwise into thin ribbon-like strips
  3. Line an oven tray with foil and spray with oil. Lay zucchini ribbons on tray and spray again lightly with oil
  4. Bake zucchini ribbons in oven for 20 minutes or until zucchini is slightly soft and beginning to brown
  5. Finely chop any remaining raw zucchini. Saute zucchini, onion, spring onion and garlic in a non-stick frypan with olive oil for five minutes
  6. Add lentils, mixed herbs, soy sauce, tomato paste and paprika. Continue to cook on low heat until the mixture resembles a paste
  7. Meanwhile, steam carrots in a saucepan steamer (or in the microwave) until they just begin to soften – do not overcook
  8. Spread each zucchini ribbon evenly with the vegetable and herb paste. Place 1 or 2 carrot strips in the middle of each zucchini ribbon, then roll each ribbon up and secure with a toothpick
  9. Transfer roll-ups to a serving plate. Can be served hot or cold
