  • 1/2 cup olive oil
  • 1 large onion chopped finely
  • 2 cloves garlic minced
  • 3 medium sized zucchinis
  • 200 grams ham chopped finely
  • 1 cup low fat cheddar cheese grated
  • 1 cup wholemeal self raising flour
  • 5 eggs


  1. Use 1 teaspoon of the oil to grease a 16cm x 26cm baking tin, and pre-heat oven to 180˚C
  2. Heat a medium non-stick frypan and add 1 teaspoon of oil
  3. Add onion and garlic and cook until the onion goes clear, then remove from heat
  4. Combine zucchini, onion, garlic, ham, cheese, sifted flour, remaining oil and lightly beaten eggs in a large mixing bowl
  5. Pour mixture into greased baking tin and bake for 30 to 40 minutes or until browned
